When sending a payment from a Bitcoin wallet input larger than the transaction or invoice value, the 'change' is returned to the spending wallet using a new Bitcoin address associated with the spending wallet.
Similar to spending a $20 note on a $10 transaction, the change would be returned with a new $10 note.
